My daughter is a walking (and talking!) encyclopedia of nutrition advice.
As a person who used to suffer from multiple health issues involving almost every part of her body from her skin to her gut, she is a strong promoter of the healthy, vegan lifestyle that has radically changed her life.
Not gonna lie, sometimes she gets down into the (sea)weeds 😂 with data, studies and the minutiae only a nutrition geek would appreciate, but I’m going to try and tease out the more valuable, doable, nuggets of info and start sharing them with you.
Lately, my girl has been on me to radically increase the greens my husband and I consume every day.
“There is no other food that is pushed more in the plant based health world than leafy greens. Raw and cooked. I like to sauté 4 cups of greens in 1 Tbsp dijon mustard and 1 Tbsp maple syrup…it takes away the bitterness and they’re actually really good. Keep the lid on half the time, eventually allowing the steam to escape. Add a squirt of lemon juice and/or spices like garlic. They’re high in calcium, iron, b vitamins, folate.. the list goes on and on. They’re vital. Throw them in sandwiches/wraps, add them to smoothies, add them to vegan veggie pizza, make puréed green soup, oil-free kale chips, etc.”
The road to better health is paved in decisions..most of them involving taking things away or adding them to our routines and diet.
This looks like a relatively easy “add.”
