Here’s another delicious recipe using BEYOND MEAT “bratwurst” just in time for cool autumn afternoons or evenings by the fire. The flavors are just scrumptious and these beauties can be served over noodles or in a toasted bun.
- 1 package Beyond Meat brats (thawed, not frozen)
- 1 small red onion sliced thin
- 1 sweet apple sliced thin (skin on)
- 1 cup vegetable broth
- 2 TBSP stone ground mustard
- 1/2 tsp thyme
- 1/2 tsp rosemary
- salt and pepper to taste
Brown sausage in pan with tiny amount of oil- about ten minutes- remove from pan.
Sautée apples and onions in pan until golden-add spices.
Add broth and mustard. Reduce until thickened, stirring occasionally.
Add brats to mixture just to warm up again.
Spoon onto noodles or into toasted buns…enjoy!

My husband and I took a walk yesterday morning. The sea was alive with huge waves bashing against the shoreline. Our area has had quite a few days like that over the past weeks and the beach erosion is significant.
Many of us are facing our own form of erosion as negative circumstances keep washing up against us. A few truths struck me:
#1- You can’t make the “sea” calm down- so stop trying.
#2- There is beauty all around- even in the storm.
#3- At some point, you will need to replenish and rebuild some areas; this is when you call on (and make new) friends.
