Earlier this month I posted a super simple recipe for roasted chick peas. The following recipe is a light and healthy option to make with your left-overs. So easy to prepare and again, talk about protein packed deliciousness! I have put this in a sandwich as you would a chicken salad, but it tends to fall out from between the bread..so it would be even better on its own, served as a side in a lettuce leaf.

Voila! You can add more seasoning if you wish, but the seasoned chick peas I had were already tasty enough for me..I am SUCH a fan of roasted, seasoned chick peas!
