After all that talk about cake and yummy internet food yesterday we had a surprisingly satisfying and healthy vegetarian dinner. Hands down, the star of the show was the barbecued cauliflower.
It doesn’t get simpler than this:
- Rinse and slice cauliflower into large pieces.
- Drizzle with avocado oil, season with salt, pepper and garlic powder.
- Place cauliflower on med-hot grill… 5 mins per side exactly!
- Place cauliflower in bowl and drizzle very small amount of favorite bar-b-q sauce on top, gently toss to coat.
Yeah, I know..bar-b-q sauce isn’t exactly health food, but here’s the deal: I’m cooking for a man who normally expects fries with a burger. Not only did he get cauliflower instead of fries..the “burger” was barbecued zucchini.. SURPRISE!! 😂 😉
Compromise is everything. 👍
