Yes, this recipe is a keeper! So easy, delicious and health-wise- not bad. Hey, at least there’s no pepperoni on top!
Ingredients:
Prepared pizza dough (Available at Publix for $1.99-woohoo!)
1 head of cauliflower
Prepared garlic hummus
1/2 cup of shredded cheese..(I used Mozzarella)
one small yellow onion
a few mushrooms
half a red pepper
smoky turmeric
salt, pepper
garlic powder.
Directions:
(Allow your dough to sit at room temp for a few hours before using.)
Wash the cauliflower and break into sizes that will not stand up too tall on a pizza.
Lay the cauliflower in a large pyrex pan and drizzle with olive oil. Sprinkle with the spices above to taste. (I’m IN LOVE with smokey turmeric!)
Roast for 25 mins or so on about 400. You want them to be soft but not mushy.
Remove the cauliflower, add a bit more oil to the pan and then add your sliced pepper, onions and the mushrooms. Stir them all around so the vegetables are coated in the oil and remaining spices. Roast until softened and golden..about 15 mins.
****** Boost the oven temp to 500-550.
Carefully work your dough until it is the shape of a pizza. Lay it on a flowered pizza peel and smear your hummus on it. I probably used 3 or 4 tablespoons..not a lot. Sprinkle the shredded cheese on top of that..again, I only used maybe 1/2 cup. (Honestly, I could go without..)
Lay the veggies all over the top, transfer to your HOT pizza stone in the oven (yes, you really should have one) and roast at 500-550 until crispy.
Enjoy right out of the oven if you can!
