I have been having some serious fun playing with my food. I think the inspiration is coming from that cooking show, (CHOPPED) where chefs incorporate some nasty ingredient into a meal they then have 30 minutes to prepare. It’s all very dramatic when they simultaneously open their baskets to reveal the crazy stuff they have to cook with.
Kinda reminds me of opening my own fridge 30 minutes before my poor, hungry husband comes home.. “hmm, let’s see..I have a shriveled green pepper, 3 bruised mushrooms, a hot dog bun and yoghurt, YAY- let’s make dinner!!
All joking aside, you have to give credit to these chefs for their creativity and that’s what’s motivating me to tweak some old recipes of mine and come up with healthier versions of them. True, sometimes I swing and miss (see previous post) but I’ve already developed a few keepers.

I’d share the recipe for the sweet potatoes above, but I forgot exactly how I made it.

I’m having fun jacking up my recipes to make them healthier..the not fun part is trying to make dinner out of two slices of cheese and left-over rice from China Buffet…HA!–I need to be a better shopper to be a better cook.👍
