All we are sayin’…is give beets a chance 🎶 Roasted chicken with root vegetables.

I don’t know what made me think I hated them.  Maybe it’s because all I ever saw were these shiny, slippery, pickled, purple things that came from a jar.. kinda like that wiggly cranberry stuff from the can- ugh.

Well, better late than never as they say..I made my first actual meal with fresh beets from my new favorite cookbook..and guess what? It was delish!!


List of ingredients:



I substituted chicken thighs and legs for a whole chicken and only used cajun seasoning because i couldn’t find the Greek stuff.



Basically, this is cut up carrots, beets, butternut squash, garlic and onion, tossed in olive oil, lemon juice and spices..roasted with chicken.  The beets added lovely color and flavor..but fair warning- your finger tips will be red by the time you’re done chopping them up!

I am absolutely loving this cookbook by Elizabeth Heiskell…lots of pictures, which I need for inspiration! ($20 on Amazon)

    I thought I hated beets for the same reason! Discovered that I love the flavor when I was a student of Russian and learned to love borscht! Now I am a huge fan, especially in the summer, when I can get fresh, local beets. Love them roasted!

      That’s how I made them..just straight up roasted..(not that I know any other way to prepare them) 😃

        When I’m in a hurry, I put them in a covered dish with olive oil and sea salt and microwave them. Same effect, but quicker!!

        Just about what you’d use for baked potatoes. Depends on the size of the beets, but usually around 3-4 minutes. Yummy!
