Spicy Szechwan Chicken

This is the first recipe in my empty nest cookbook…


No, that’s not the title, but seriously, it’s hard to feel inspired right now when the messy room that used to house my ever-hungry teenager looks like this:

But hey, I took the opportunity to clean out my spice cabinet today..


and besides discovering 4 opened boxes of baking soda, I also found a few spices that I totally forgot I had purchased and NEVER used; 😱 including this Szechwan mix.


I shook it liberally over two chicken breasts and fried them both in olive oil just until the pink was gone.


 The taste was delicious and the flavors left behind in the pan infused the zucchini I sautéed right after.

Quick, easy, yummy and yup, that’s it.

  2. Stick the baking soda in the freezer. It does…something. I forget. But I always have one in there.

      I thought of that too after I tossed them out. Frankly, I was just ticked off at myself for having FOUR of them!!! What the heck?
